What we operate to.

Maurimar's quality system is built on documented, repeatable processes — not aspirational claims. Below is what is in place and verifiable.

ONISPA-certified operations

Operations are certified by the Office Nationale d'Inspection Sanitaire des Produits de la Pêche et de l'Aquaculture (ONISPA), which issues the sanitary certificates required for export.

Export-grade health certification

Holds the export health certification required for shipments into Japan, the European Union, and the Middle East.

Continuous cold chain monitoring

Temperature is logged from landing through freezing and container loading. Product never leaves the verified cold chain.

Batch-level traceability

Every batch carries a unique ID from landing to container. Tracing any case to its boat of origin takes minutes.

At landing, each batch is documented with catch date, catch zone, and landing time. This catch record stays with the product through every transition — processing, freezing, and loading.

Any case of finished product can be traced back to the boat that landed the catch within minutes. Catch documentation is linked across the carton label, packing list, and Maurimar's internal records.

Quality control

Sensory and visual grading, against documented criteria.

Quality is checked at four points: on the boat at the time of capture, at landing on the dock, during processing in the factory, and again before container loading. Each checkpoint is logged and documented — the record travels with the batch.

Sensory and visual evaluation is performed at each checkpoint by trained Maurimar QC staff, working against documented criteria for colour, firmness, tentacle integrity, and absence of bruising — the parameters that determine grade and destination market eligibility.
